Ingredients
- 2 sm leaks (3/4 cup) cut up
- 2 med carrots, diced
- 2 sm onion, diced
- 2 med celery, diced
- 1 med zucchini, diced
- 3 cups spinach leaves, cut into strips
- 1 can (28 oz) whole tomatoes drained and chopped
- 1 parm cheese rind
- ½ cup Basil Pesto
- 1 can cannellini beans
Directions
- Bring veggies, tomatoe, 8 cups water, cheese rind, and 1 tsp salt to a boil in a large pot. Once boiling, lower heat to simmer for one hour uncovered, stirring occasionally.
- Add beans and cook through about 5 minutes
- Remove Cheese Rind
- Stir in Pesto
- Adjust salt and pepper
